Ingredients
- 12 oz uncooked elbow macaroni
- 1 cup celery, chopped
- 1 cup red bell pepper, chopped
- 1/3 cup onion, chopped
- 3/4 cup vegan mayonnaise
- 2 Tablespoon apple cider vinegar
- 1 Tablespoon yellow mustard
- 1 teaspoon organic cane sugar
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
Instructions
- Cook macaroni according to package instructions.
- While the macaroni is cooking whisk together the mayonnaise, apple cider vinegar, yellow mustard, sugar, salt and pepper in a medium bowl.
- Drain the macaroni and add it to a large bowl. Let it sit for a few minutes to cool.
- Mix in the mayonnaise dressing and then add the chopped celery, chopped bell pepper and chopped onion. Mix well.
- Cover and refrigerate for at least 4 hours or overnight if possible before serving.
- Stir before serving and enjoy!
