Vegan Mushroom and Thyme Cheese Bread

Ingredients
- 8-10 slices of French bread or any baguette
- 1 large garlic clove
- 1 Tablespoon olive oil
- 2 medium shallots
- 8 ounces sliced mushrooms
- 1 teaspoon fresh thyme
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups shredded vegan mozzarella cheese
- 1/4 cup grated vegan parmesan cheese
- 1/2 cup vegan mayonnaise
Instructions
- Start by preheating the oven to 420 degrees F. Put sliced bread on a baking sheet and season with salt and pepper. Bake for 5 minutes, flip bread and bake for another 5 minutes.
- Remove bread from the oven. Rub each slice with the garlic clove.
- Add olive oil to a large skillet. Saute the mushrooms and shallots for 8 to 10 minutes, stirring frequently. Stir in the thyme, salt and pepper.
- In a medium bowl mix the mozzarella, permesan and mayonnaise. Add a pinch of salt and pepper.
- Switch the oven to broil. Spread the cheese mixture onto each slice of bread. Top with the mushrooms and shallots.
- Put the cheese bread into the oven for 5 minutes. Watch carefully so the bread doesn't burn.
- Remove from the oven and garnish with more parmesan cheese and thyme.
