Vegan Mushroom and Thyme Cheese Bread

Ingredients

  • 8-10 slices of French bread or any baguette
  • 1 large garlic clove
  • 1 Tablespoon olive oil
  • 2 medium shallots
  • 8 ounces sliced mushrooms
  • 1 teaspoon fresh thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded vegan mozzarella cheese
  • 1/4 cup grated vegan parmesan cheese
  • 1/2 cup vegan mayonnaise

Instructions

  1. Start by preheating the oven to 420 degrees F. Put sliced bread on a baking sheet and season with salt and pepper. Bake for 5 minutes, flip bread and bake for another 5 minutes.
  2. Remove bread from the oven. Rub each slice with the garlic clove.
  3. Add olive oil to a large skillet. Saute the mushrooms and shallots for 8 to 10 minutes, stirring frequently. Stir in the thyme, salt and pepper.
  4. In a medium bowl mix the mozzarella, permesan and mayonnaise. Add a pinch of salt and pepper.
  5. Switch the oven to broil. Spread the cheese mixture onto each slice of bread. Top with the mushrooms and shallots.
  6. Put the cheese bread into the oven for 5 minutes. Watch carefully so the bread doesn't burn.
  7. Remove from the oven and garnish with more parmesan cheese and thyme.
