Vegan Peanut Butter Balls

These vegan peanut butter balls are healthy, gluten-free and are quick and easy to make. They are dipped in chocolate and can be topped with coarse sea salt or chopped peanuts for the perfect treat!

  1. In a medium bowl, mix together the peanut butter, maple syrup, salt and 3/4 cup almond flour. Lightly stir in the cereal. If your mixture is too sticky, add the remaining 1/4 cup of flour. If your mixture is too dry, add more maple syrup.
  2. Using about 1 Tablespoon per ball, push together the dough, roll it into a ball and place on a tray lined with parchment. Repeat for the rest of the dough. This recipe makes about 20 balls.
  3. Place balls in the freezer for 30 minutes.
  4. Melt chocolate by using a double boiler or according to instructions on chocolate.
  5. Remove balls from the freezer. Using a fork drop a ball in melted chocolate and cover completely. Place back on parchment and top with coarse sea salt or chopped peanuts. Repeat until they are all covered. Freeze for 30 minutes. If you want a chocolate drizzle on them freeze for 10 minutes after dipping in chocolate, then drizzle with chocolate and freeze for the remaining 20 minutes.
  6. Move them to the fridge and enjoy!
