Easy Vegan Macaroni Salad Ingredients

Ingredients you will need

  • Elbow Macaroni
  • Celery - You only need one rib.
  • Red Bell Pepper - Feel free to use any color bell pepper. We used red to give the recipe a pop of color.
  • Onion - You can also use a red onion if you prefer a stronger onion flavor.
  • Vegan Mayonnaise - Follow Your Heart Vegenaise works great!
  • Apple Cider Vinegar - Apple cider vinegar helps create a perfect balance of creamy but slightly tangy.
  • Yellow Mustard - Yellow mustard works best for this recipe.
  • Organic Cane Sugar - Some sugars are made using bone char. So, we like to use Wholesome brand or you can look for a vegan label on other brands.
  • Salt
  • Pepper

Ingredients

  • 12 oz uncooked elbow macaroni
  • 1 cup celery, chopped
  • 1 cup red bell pepper, chopped
  • 1/3 cup onion, chopped
  • 3/4 cup vegan mayonnaise
  • 2 Tablespoon apple cider vinegar
  • 1 Tablespoon yellow mustard
  • 1 teaspoon organic cane sugar
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Cook macaroni according to package instructions.
  2. While the macaroni is cooking whisk together the mayonnaise, apple cider vinegar, yellow mustard, sugar, salt and pepper in a medium bowl.
  3. Drain the macaroni and add it to a large bowl. Let it sit for a few minutes to cool.
  4. Mix in the mayonnaise dressing and then add the chopped celery, chopped bell pepper and chopped onion. Mix well.
  5. Cover and refrigerate for at least 4 hours or overnight if possible before serving.
  6. Stir before serving and enjoy!
