Mediterranean foods are always full of delicious flavors and these flatbreads are no exception! Kids and non-vegans will love them too. It's a great option for a quick weeknight dinner and you can make them even faster by having the whipped feta made in advance.

Ingredients you will need

  • Flatbreads - Pitas will also work.
  • Vegan Feta
  • Olive Oil
  • Onion - We used red onion but use whatever you prefer.
  • Tomatoes
  • Olives - Kalamata and Green. Use black olives instead if you like.
  • Spinach
  • Black Pepper
  • Salt
  • Crushed Red Pepper - This is optional for serving.

Can I make the whipped feta ahead of time?

Yes,  the whipped feta can be kept in the refrigerator for up to a week.

Tips

  • Use less or more of any ingredients to suit your preferences.
  • Reheat leftovers in oven at 400° F for 5 minutes.

Ingredients

  • 4 flatbreads
  • vegan whipped feta
  • 1 handful spinach
  • 1/2 medium red onion, chopped and halved
  • 1/2 cup mixed olives
  • 2 medium tomatoes, sliced
  • 1/2 cup vegan feta
  • olive oil for drizzling
  • salt and black pepper for seasoning
  • crushed red pepper, optional

Instructions

  1. Preheat oven to 425° F.
  2. Line baking sheets with parchment. Place flatbreads on the parchment and spread on whipped feta.
  3. Top the flatbreads with spinach, onions, olives and tomatoes.
  4. Add feta cheese, drizzle with olive oil and season with salt and pepper.
  5. Bake in the oven for 10 to 15 minutes.
  6. Cut and garnish with crushed red pepper if desired.
